Why does 100 g of flour and 100 g of sugar give different cups?

Cups measure volume and grams measure weight. Sugar is denser than flour, so the same 100 g fills less of a cup: 0.5 cup of sugar at 200 g per cup, but 0.8 cup of all-purpose flour at 125 g per cup.

Where do the weights per cup come from?

My recipe uses metric cups. Is that different?

Yes. An Australian or metric cup is 250 mL, about 6 percent larger than the US cup used here. For a metric-cup recipe, multiply the cups shown by about 0.95.

Why is flour so hard to measure by cups?
